# Ingredients:

→ Vegetables

01 - 1 head cauliflower, cut into florets
02 - 1 tablespoon olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - 1/2 teaspoon smoked paprika
06 - Salt and pepper, to taste

→ Sauce

07 - 1/2 cup buffalo sauce

→ Toppings

08 - 1 cup shredded carrots
09 - 1 cup diced cucumber
10 - 1/2 cup chopped green onions
11 - 1 avocado, sliced
12 - Fresh cilantro, for garnish
13 - Lettuce leaves (such as romaine or butter lettuce)

# Steps to Follow:

01 - Set oven to 220°C and allow to fully preheat.
02 - In a large bowl, combine cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper, tossing to evenly coat.
03 - Arrange seasoned cauliflower in a single layer on a baking sheet and roast for 20–25 minutes, stirring halfway, until golden and crisp.
04 - Remove cauliflower from oven and toss immediately with buffalo sauce in a mixing bowl until all pieces are coated.
05 - Place roasted buffalo cauliflower in lettuce leaves and top with shredded carrots, diced cucumber, chopped green onions, and avocado slices.
06 - Finish with fresh cilantro and serve immediately while warm.

01 - For a milder flavor, blend buffalo sauce with yogurt. Serve with ranch or blue cheese dressing on the side as a dip.
