Combine blueberries, sugar, and 120 millilitres of water in a small saucepan. Warm over medium heat while stirring occasionally until the berries burst and sugar dissolves, about 5 minutes. Remove from heat and allow to cool slightly.

Place mint leaves in a large pitcher and gently muddle with a wooden spoon to release the mint’s essential oils.

Strain the blueberry syrup through a fine mesh sieve into the pitcher, pressing to extract as much liquid as possible. Discard solids.

Pour in lemon juice and the remaining cold water. Stir thoroughly to combine.

Add ice cubes to the pitcher. Garnish with extra blueberries and mint leaves as desired.

Pour into glasses and serve chilled.
