01 - 4 boneless, skinless chicken breasts (approximately 700 grams)

02 - 2 large apples, peeled, cored, and sliced (Granny Smith or Honeycrisp recommended)

03 - 1 small yellow onion, thinly sliced
04 - 2 garlic cloves, minced

05 - 120 millilitres low-sodium chicken broth
06 - 2 tablespoons olive oil
07 - 1 tablespoon fresh lemon juice

08 - 1 1/2 teaspoons ground cinnamon
09 - 1/2 teaspoon ground nutmeg
10 - 1/2 teaspoon paprika
11 - 1/2 teaspoon dried thyme

# How to Make It:
01 - Preheat the oven to 200°C (400°F). Lightly grease a large baking dish with olive oil or non-stick spray.
02 - Pat chicken breasts dry. Season both sides evenly with salt, black pepper, paprika, and half of the ground cinnamon.
03 - In a mixing bowl, toss apple slices and onion with olive oil, minced garlic, remaining cinnamon, nutmeg, dried thyme, and fresh lemon juice until thoroughly combined.
04 - Place seasoned chicken breasts in the prepared baking dish. Layer the apple and onion mixture over and around the chicken to distribute evenly.
05 - Pour the chicken broth into the dish around the chicken, taking care not to pour directly over the top.
06 - Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for 15 minutes, or until the chicken is fully cooked (internal temperature 74°C) and apples are tender.
07 - Let the chicken rest in the baking dish for 5 minutes before serving. Garnish with chopped fresh parsley if desired.
