Ingredients

  • 4 salmon fillets, about 6 ounces each

  • 2 tablespoons olive oil or butter

  • 2 cloves garlic, minced

  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped

  • 1/2 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)

  • 1 cup heavy cream

  • 1/4 cup fresh basil leaves, chopped

  • 1/4 cup fresh oregano leaves, chopped

  • Salt and freshly ground black pepper, to taste

  • Optional: Red pepper flakes, for heat

  • Optional: Lemon wedges, for serving


Instructions

  1. Pat the salmon fillets dry with paper towels. Season generously with salt and pepper.

  2. Heat olive oil or butter in a large skillet over medium-high heat.

  3. Place salmon fillets skin-side down (if using skin-on fillets) in the hot skillet. Sear for 4-5 minutes until the skin is crispy and golden brown. If using skinless fillets, sear for 3-4 minutes per side.

  4. Flip the salmon and cook for another 2-3 minutes, until almost cooked through. Remove salmon from the pan and set aside.

  5. Add minced garlic to the same skillet and sauté for about 30 seconds, until fragrant.

  6. Add the chopped sun-dried tomatoes and white wine to the skillet. Bring to a simmer and cook for 2-3 minutes, allowing the wine to reduce slightly.

  7. Stir in the heavy cream and bring the sauce to a gentle simmer.

  8. Add the chopped basil, oregano, and optional red pepper flakes to the sauce. Season with salt and pepper to taste.

  9. Gently place the salmon fillets back into the sauce. Simmer for 5-7 minutes, or until the salmon is cooked through and flakes easily with a fork. Spoon the sauce over the salmon as it cooks.

  10. Serve hot with your choice of sides. Garnish with fresh herbs and lemon wedges.
