Ingredients

      • 1 pound elbow macaroni

      • 6 cups whole milk

      • 2 cups smoked gouda cheese, shredded

      • 2 cups sharp cheddar cheese, shredded

      • 1 teaspoon salt

      • 1/2 teaspoon black pepper

    • Creamy White Cheddar Mac:

      • 1 pound elbow macaroni

      • 8 tablespoons unsalted butter

      • 8 tablespoons all-purpose flour

      • 6 cups whole milk

      • 4 cups white cheddar cheese, shredded

      • 1 teaspoon salt

      • 1/2 teaspoon white pepper

  • Toppings (Customize as desired):
    Proteins:
    * 1 pound cooked bacon, crumbled
    * 1 pound cooked sausage, crumbled
    * 1 pound cooked chicken, shredded
    * 1 pound pulled pork, cooked
    * 1 pound cooked shrimp, sautéed
    * 1/2 pound cooked chorizo, crumbled
    Vegetables:
    * 2 cups steamed broccoli florets
    * 2 cups sautéed onions, sliced
    * 2 cups roasted bell peppers, chopped
    * 2 cups sliced tomatoes
    * 1 cup sliced black olives
    * 1 cup caramelized onions
    * 1 cup roasted garlic cloves
    * 1 cup sun-dried tomatoes, packed in oil, drained
    * 2 cups baby spinach, fresh
    Cheeses:
    * 2 cups shredded cheddar cheese
    * 1 cup grated Parmesan cheese
    * 1 cup crumbled feta cheese
    * 1 cup crumbled blue cheese
    * 1 cup crumbled goat cheese
    * 1 cup shredded pepper jack cheese
    * 1 cup shredded mozzarella
    Crunchy Bits:
    * 2 cups breadcrumbs, toasted
    * 2 cups fried onions
    * 2 cups crushed crackers
    * 2 cups crumbled potato chips
    * 2 cups panko breadcrumbs, toasted
    * 1/2 cup everything bagel seasoning
    Sauces:
    * 1 bottle hot sauce
    * 1 jar pesto
    * 1 bottle BBQ sauce
    * 1 bottle ranch dressing
    * 1 bottle spicy mayonnaise
    * 1/2 cup sriracha
    * 1/2 cup truffle oil
    * 1/2 cup garlic aioli
    Additional toppings
    * 2 cups of sliced fresh cilantro
    * 2 cups of chopped fresh basil
    * 2 cups of sliced pickled red onions
    * 1 cup of sliced avocado


Instructions

  1. Prepare the Mac and Cheese Bases: Cook macaroni according to package directions. Drain and set aside.

  2. In a large pot, melt butter over medium heat. Whisk in flour until smooth and cook for 1-2 minutes.

  3. Gradually whisk in milk until smooth. Cook, stirring constantly, until thickened (about 5-7 minutes).

  4. Reduce heat to low. Stir in cheeses and salt and pepper (and any jalapeños or smoked gouda, depending on your mac base) until melted and smooth.

  5. Add cooked macaroni to the cheese sauce and stir to coat. Keep warm in chafing dishes or slow cookers.

  6. Prepare the Toppings: Cook and prepare all topping ingredients as specified in the ingredient list.

  7. Arrange each topping in separate serving bowls.

  8. Set Up the Bar: Place mac and cheese in a designated area. Arrange toppings around the mac and cheese. Provide serving spoons, plates, and utensils. Let everyone enjoy!
