* Additional toppings
* 2 cups of sliced fresh cilantro
* 2 cups of chopped fresh basil

Instructions

Prepare the Mac and Cheese Bases: Cook macaroni according to package directions. Drain and set aside.

In a large pot, melt butter over medium heat. Whisk in flour until smooth and cook for 1-2 minutes.

Gradually whisk in milk until smooth. Cook, stirring constantly, until thickened (about 5-7 minutes).

Reduce heat to low. Stir in cheeses and salt and pepper (and any jalapeños or smoked gouda, depending on your mac base) until melted and smooth.

Add cooked macaroni to the cheese sauce and stir to coat. Keep warm in chafing dishes or slow cookers.

Prepare the Toppings: Cook and prepare all topping ingredients as specified in the ingredient list.

Arrange each topping in separate serving bowls.
