Description

This hearty cornbread breakfast casserole is perfect for a weekend brunch or a cozy family breakfast. It features a delicious cornbread base, savory sausage, fluffy eggs, and melted cheese, creating a satisfying and flavorful meal. Easy to customize with your favorite add-ins.

Ingredients

  • 1 (8.5 ounce) package cornbread mix (or equivalent homemade)

  • 1 pound breakfast sausage, cooked and crumbled

  • 8 large eggs

  • 1 cup milk or cream

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 cups shredded cheddar cheese

  • Optional: 1/2 cup diced bell peppers, 1/4 cup diced onions, 1/4 cup chopped fresh herbs (like parsley or chives)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.

  2. Prepare the cornbread according to package directions (or your chosen recipe). Let it cool slightly. Crumble into the prepared baking dish.

  3. In a large bowl, whisk together the eggs, milk or cream, salt, and pepper.

  4. Stir in half of the shredded cheese.

  5. Spread the cooked and crumbled sausage over the cornbread in the dish. If using, add diced bell peppers and onions.

  6. Pour the egg mixture evenly over the cornbread and sausage.

  7. Sprinkle the remaining shredded cheese over the top of the casserole.

  8. Bake for 30-40 minutes, or until the casserole is golden brown and the eggs are set.

  9. Let the casserole rest for 10 minutes before slicing and serving. Garnish with fresh herbs, if desired.

Notes

  • Variations: For a spicier casserole, use chorizo instead of breakfast sausage and add a can of diced green chilies. For a vegetarian version, omit the sausage and add sautéed mushrooms, spinach, or other vegetables.

  • Tips: You can assemble the casserole the night before and bake it in the morning. If baking from cold, you may need to add 5-10 minutes to the baking time.

  • Intolerances/Allergies: This recipe contains dairy and gluten. Use gluten-free cornbread mix for a gluten-free option. Substitute dairy-free milk and cheese alternatives for a dairy-free version. Ensure all ingredients are compliant with your specific dietary needs.

  • Taste Preferences: Adjust the amount of salt and pepper according to your taste. Add your favorite herbs or spices for extra flavor.

  • Ingredient Adjustments: The amount of cheese can be adjusted to taste preference. You can also use other cheeses, such as Monterey Jack or Gruyere.
