- 1/2 medium yellow onion, chopped

- 2–3 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce (from the can)
- 1 pound pasta (penne or rotini recommended)
- 1 1/2 cups heavy cream or milk (or a mix)
- 1 1/2 cups shredded Monterey Jack or pepper jack cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned.
- Add chopped onion and garlic to the skillet. Cook until softened, about 3-5 minutes.
- Stir in the chopped chipotle peppers and adobo sauce. Simmer for 5 minutes.
- Meanwhile, cook the pasta according to package directions. Drain the pasta when finished.
- Pour in heavy cream or milk into the skillet with the chicken. Bring to a simmer, then add the cheese. Stir until the cheese is fully melted.
- Add the cooked pasta to the sauce. Toss everything together to coat the pasta evenly.
