Description

A flavorful and satisfying chipotle chicken pasta recipe. This dish blends smoky, spicy chicken with creamy pasta for a perfect homemade meal.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 23 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon adobo sauce (from the can)
  • 1 pound pasta (penne or rotini recommended)
  • 1 1/2 cups heavy cream or milk (or a mix)
  • 1 1/2 cups shredded Monterey Jack or pepper jack cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned.
  2. Add chopped onion and garlic to the skillet. Cook until softened, about 3-5 minutes.
  3. Stir in the chopped chipotle peppers and adobo sauce. Simmer for 5 minutes.
  4. Meanwhile, cook the pasta according to package directions. Drain the pasta when finished.
  5. Pour in heavy cream or milk into the skillet with the chicken. Bring to a simmer, then add the cheese. Stir until the cheese is fully melted.
  6. Add the cooked pasta to the sauce. Toss everything together to coat the pasta evenly.
  7. Cook for another 1-2 minutes to allow flavors to blend.
  8. Remove from heat and garnish with fresh cilantro.
  9. Serve hot and enjoy your chipotle chicken pasta!
