Description

Enjoy warm, moist, and incredibly easy banana bread made right in your bread machine! This simple recipe is perfect for busy bakers and beginners. Just toss in your ingredients, press start, and let your bread machine do the work. Get ready for a delicious homemade treat with minimal effort and maximum banana flavor!

Ingredients

  • 2 medium ripe bananas, peeled and halved lengthwise

  • 2 cups all-purpose flour

  • ¾ cup granulated white sugar

  • 2 large eggs

  • 3 tablespoons vegetable oil

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

Instructions

  1. Combine Ingredients: Place the peeled and halved bananas, all-purpose flour, granulated white sugar, large eggs, vegetable oil, baking powder, and baking soda into the bread machine pan.

  2. Select Dough Cycle: Select the “Dough” setting on your bread machine and press “Start”.

  3. Mix and Mash: Allow the bread machine to mix the ingredients until they are well combined and the bananas are mashed, approximately 3 to 5 minutes. If necessary, use a rubber spatula to push any dough from the sides of the bread pan towards the center.

  4. Stop and Smooth: Press “Stop” on the bread machine. Use a rubber spatula to smooth out the top surface of the loaf in the bread pan for even baking.

  5. Select Bake Cycle: Select the “Bake” setting on your bread machine and press “Start”.

  6. Bake Until Done: Bake in the bread machine until a toothpick inserted into the center of the bread comes out clean, about 50 minutes.

  7. Check for Doneness: If the toothpick is not clean after 50 minutes, reset the machine to the “Bake” setting and continue baking for an additional 10 to 15 minutes, checking again for doneness with a toothpick.

  8. Cool in Pan: Once baked, carefully remove the bread machine pan from the machine. Let the banana bread remain in the pan for 10 minutes to cool slightly.

  9. Cool on Rack: After 10 minutes, gently transfer the banana bread from the pan to a wire rack to cool completely before slicing and serving.

Notes

  • Banana Ripeness: For the best flavor and moisture, use very ripe bananas with brown spots. The riper the bananas, the sweeter and more flavorful your banana bread will be.

  • Variations:

    • Nuts: Add ½ cup of chopped walnuts, pecans, or almonds to the batter before baking for added texture and flavor.

    • Chocolate Chips: Stir in ½ cup of chocolate chips (milk, semi-sweet, or dark) for a sweeter treat.

    • Spices: Enhance the flavor with ½ teaspoon of ground cinnamon, nutmeg, or a blend of both.

    • Extracts: Add 1 teaspoon of vanilla extract or banana extract for a richer flavor profile.

  • Serving Suggestions: Serve slices of bread machine banana bread warm or at room temperature. It’s delicious on its own, or you can spread it with butter, cream cheese, or a drizzle of honey.

  • Storage: Store leftover banana bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. For longer storage, wrap tightly and freeze for up to 2 months.

  • Gluten-Free Option: To make this recipe gluten-free, substitute the all-purpose flour with a gluten-free all-purpose flour blend. Ensure the blend is designed for baking and contains xanthan gum or a similar binder.

  • Dairy-Free Option: This recipe is naturally dairy-free.

  • Vegan Option: To make this recipe vegan, replace each egg with a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons of water, let sit for 5 minutes to thicken). Ensure your sugar is vegan-friendly (some white sugars are processed with bone char, though most are not in the US).

  • Sweetness Adjustment: Adjust the sugar to your preference. For a less sweet bread, reduce the sugar to ½ cup.
